Ethylcellulose (EC) is a water insoluble, lipophilicpolymer with a novel ability to thicken a variety of food fats and oils. This unique polymer allows formulators to replace or reduce trans fatty acids, saturated fats, and tropical oils while maintaining the desired texture of the finished product. ECis also used extensively in dietary supplements for its modified release properties.
